Jalapeno Popper Mummies

These Jalapeno Popper Mummies are creamy, cheesy, and wrapped in flaky golden crescent dough bandages with candy eyes. The perfect Halloween appetizer that looks spooky, tastes incredible, and is ready in 30 minutes.

Ingredients
  

For the Filling
  • 10 medium Jalapenos, halved lengthwise Or 20 mini sweet peppers for mild version
  • 8 oz Cream cheese 225g, softened to room temperature
  • 1 cup Shredded Monterey Jack or cheddar 115g
  • 1 tsp Garlic powder
  • ½ tsp Onion powder
  • ½ tsp Smoked paprika
  • ¼ tsp Black pepper
  • ¼ tsp Salt
  • 4 strips Bacon, cooked and crumbled Optional but recommended
For Assembly
  • 2 cans (8oz) Crescent roll dough Sheets preferred over triangles
  • 1 large Egg, beaten with 1 tbsp water Egg wash for adhesion and color
  • 40 Candy eyeball decorations 2 per popper half, added AFTER baking

  • 1 Baking Sheet Line with parchment paper
  • 1 Pizza Cutter For cutting even crescent dough strips
  • 1 Pastry brush For egg wash application
  • 1 Piping bag or zip-lock bag For filling the jalapenos neatly
  • 1 pair Disposable gloves Essential when handling raw jalapenos

Method
 

Prep the Jalapenos
  1. Gloves On, Clean Thoroughly: Wearing disposable gloves, slice each jalapeno in half lengthwise. Use a small spoon to scoop out all seeds AND the white membrane from each half, scraping the inner walls completely clean. The membrane holds most of the heat, not just the seeds, so removing both is what actually controls the spice level. Rinse the cleaned halves under cold water and pat completely dry with paper towels.

Make the Filling
  1. Smooth and Well Combined: In a large bowl, combine the softened room temperature cream cheese, shredded cheese, garlic powder, onion powder, smoked paprika, black pepper, and salt. Mix until completely smooth with no lumps. Fold in the crumbled bacon if using. Transfer to a piping bag or zip-lock bag with one corner snipped.

Fill the Jalapenos
  1. Fill Flush, Not Overfilled: Pipe the cream cheese filling into each jalapeno half, filling it flush with the top. Do not overfill since the filling expands slightly during baking and overfilling causes it to push out and loosen the dough wrapping.

Prepare and Wrap the Dough
  1. Pizza Cutter for Clean Strips: Open the crescent dough and press any perforations together to form one flat sheet. Cut into thin strips about a quarter inch wide using a pizza cutter. Lightly brush each filled jalapeno half with egg wash. Wrap two to three dough strips around each pepper in a crisscross bandage pattern, leaving a gap of about half an inch near the top for the eyes. Press the ends of each strip against the pepper to adhere. Brush the outside of all the wrapped dough strips with another coat of egg wash.

Bake
  1. Golden All Over: Preheat oven to 375°F (190°C). Place the wrapped mummies on the prepared baking sheet at least one inch apart. Bake for 12 to 15 minutes until the crescent dough is deep golden brown all over and the cheese is visibly bubbling through the eye gap.

Add the Candy Eyes and Serve
  1. Eyes Go On After Baking: Remove from the oven immediately and press two candy eyeball decorations into the warm cream cheese filling at the top of each mummy where you left the dough gap. The warm cheese holds them in place as everything cools. Serve warm within 10 to 15 minutes of baking with sour cream or ranch dressing for dipping.

Notes

  • Always wear gloves when handling raw jalapenos. Capsaicin oil transfers to your hands and can burn eyes and skin for hours even after washing.
  • Control the heat level: Remove seeds AND membrane for mild. Leave some membrane for medium. Leave both for hot. Use sweet peppers for zero heat.
  • Cream cheese must be softened. Cold cream cheese will not blend smoothly. Leave out 30 to 45 minutes before using.
  • Crescent sheets are easier than triangles. If using triangles, press all perforations together firmly before cutting strips.
  • Pizza cutter for strips. Produces cleaner, more even strips than a knife without compressing the dough.
  • Egg wash is the glue. Brush on before wrapping for adhesion and after wrapping for golden color. Skip it and the strips will unravel in the oven.
  • Candy eyes ALWAYS go on after baking. Sugar coating melts in oven heat. Press into warm cheese immediately after removing from oven.
  • Make-ahead: Assemble up to 6 hours ahead, refrigerate covered, bake fresh. Always add eyes after baking.
  • Serve warm. These are best within 15 minutes of baking when the dough is crispy and the filling is creamy.
  • UK/Australia notes: "Crescent roll dough" is similar to croissant dough available in tubes. "Monterey Jack" can be replaced with mild cheddar or mozzarella. "Candy eyeball decorations" are available at baking supply stores or online.
